- 2-3 Tablespoons Olive Oil
- 3 Chilies, sliced in half lengthwise
- 2 Tablespoons Garlic
- 2 Tablespoons Ginger
- 2 Tablespoons Cumin
- 2 Tablespoons Coriander
- 1 Tablespoon Turmeric
- Salt to taste
- 1 Cup sweet tomatoes
- 1 Nuco Wrap for the base
- Juice of 1 lime
Cook Time: 30 min
Heat a skillet with olive oil and let it start to smoke a little, then add chilies. Sear for about 2-3 minutes, seasoning wth salt.
Add garlic, ginger, cumin, coriander, turmeric, and let the seasoning cook a little, about 1 minute.
Add raw shrimp and cook until pink and translucent, about 5 - 7 minutes.
While shrimp is cooking, slice 1 cup of small sweet tomatoes and lime in half, set aside.
Lay out 1 Nuco wrap on a serving dish, and spoon over cooked shrimp.
Add fresh tomatoes and squeeze lime juice over to finish.
