Burnt Cauliflower rice

 

Ingredients 

  • 1 cauliflower head chopped into pieces, and blended together in a Cuisinart to mince into small pieces. (Recc: buy a prepped bag of cauliflower rice ready to go.)
  • 1 tablespoon olive oil
  • Big pinch of salt
  • 1/2 bag of frozen peas (or fresh if in season)
  • Fresh cracked pepper

Cook Time: 15 min
Servings: 4

Directions

In a non stick skillet heat up olive oil

Add prepped cauliflower to pan, you should hear a sizzle and let it sit for about 5 to 7 minutes to crisp up before stirring

Season with a big pinch of rice and stir

Add in peas and cook for another 5 minutes

Add black pepper and you are ready to serve or save for leftovers!
