Beet Pickled Eggs
- 5 Hard boiled eggs
- 2 Beets thinly sliced
- 2 cloves of garlic (thinly sliced)
- 16 oz White wine vinegar
- 1 Cup of water (optional those who want less "salt" flavor)
Cook Time: 45 min
Hard boil 5 eggs, let cool, and peel, set aside
Scrub 2 beets clean and slice thinly on a mandoline.
In a small pot, add sliced beets, garlic, vinegar, (and water if you want a less salt/pickled flavor.)
Bring all to a boil. After boiling for 2 minutes turn off stove.
In a jar combine beet mixture with hardboiled eggs. Close tightly and refridgerate overnight.
Use these pickled eggs sliced in a salad or as a side, and make sure to add in the pickled garlic and beets!
