Hi! I’m Salima, and this is a story of the journey through food, I embarked on in hopes of helping my mom, who is living with Alzheimer’s. I truly believe in the healing power of food and how diet can improve the lives of people who live with a degenerative disease. As I started on what I thought was a personal journey of health and family I found myself researching what the heck an anti-inflammatory diet is. What I was left with was a lot of information on what foods to eat and very few recipes that were compatible for the anti-inflammatory lifestyle. This was bigger than my family. Through tons of trial and error, Salted Cashew was created, so you and your loved ones don’t feel restricted to a world of single ingredient meals.
My mother is my real inspiration to create Salted Cashew. When she was diagnosed, my family and I knew it was time to make some serious lifestyle changes. One of most impactful changes to becoming healthy again was and is diet. I learned that changing our moms diet could extend her life by days, which may not seem like a lot to the average viewer but to those who are here for their family members, that time is too precious not to try.
Three Healthy generations
Today, I am a blessed to say I can still get advice from my grandma or mother; unfortunately there are too many of us that can not say the same.
This change is hard, I struggled, so did my mother--this is life changing--but starting small does add up. First thing we did was drink more water throughout the day. I know, I know, it sounds silly but including just 3 cups more a day gives you more energy and helps you sleep better.
